Luxara 300 Series - Ingredients for The Meat industry
  The Luxara 300 series consists of a range of high quality, cost effective Carrageenan based products developed for use in the meat processing industry. It also includes a range of glazes and pie gel systems. Products include:-    
  • Specifically formulated Luxara Carrageenans for use in brine mixes for injection and tumbling.
  • Carrageenans and blended systems for use in canned, ground, emulsified and reformed meat products such as pates, hamburgers, sausages, poultry rolls and formed hams. These ingredients are designed to enforce the structure, reduce the syneresis and improve the texture of the finished product. Importantly, they will also increase processing yields.
  • A range of pie gels including Gelatine "free" systems'
  • A range of cost effective bakery glazes, which are available in easy to disperse powders. They produce non-tacky, crack resistant, chill stable glazes and avoid the microbial problems normally associated with traditional egg based glazes.
393/394 PASTY/SPRING ROLL STABILISER
Meat and potato pasties, spring rolls and similar products may suffer from ‘boil-out’ during processing. LUXARA 393 is a cold water soluble material which however gels when heated and in this way inhibits cooking losses by boil-out.
399 LOW FAT HAMBURGER STABILISER
LUXARA 399 is a selected blend of Carrageenans designed for use in low fat burgers. It increases the juiciness and reduces the tough texture normally associated with this kind of product. Additional flavour is also recommended.
