900 FRUIT FLAVOURED JELLY MIX
There are four types of fruit flavoured jelly mixes which are suitable for vegetarians and contain no artificial colours or flavours. The powder is added to hot water to produce a soft gel on cooling. Setting is more rapid than Gelatine-based systems. The four flavours are raspberry, strawberry, lemon and tropical.
911 CRÈME PATISSIÈRE
LUXARA 911 is a complete mix for a crème patissière (baker’s custard). LUXARA 911 is whisked into cold water to produce a vanilla flavoured crème patissière with excellent body and reworking characteristics which can be used for instance in trifle or vanilla slices.
915 MALTED MILK DRINK POWDER
LUXARA 915 malted milk drink powder is whisked into hot milk to produce an instant milk drink with good flavour and creamy mouthfeel.
930 Custard Powder
Luxara 930 Custard Powder is an example of cold make-up vanilla custard which can be used as a trifle topping or a vanilla slice filling, depending on the amount of water that is added. When used in vanilla slices, Luxara 930 sets rapidly but nevertheless can if required be stored (refrigerated) and reworked for up to 24 hours after make-up.
935 Custard Powder
Luxara 935 Custard Powder is a hot-prepared, free-flowing custard designed for use with puddings and desserts. It is freeze/thaw stable.
936 Custard Powder
Luxara 936 Custard Powder is a sugar-free version of the above which can be used in low-calorie or diabetic applications.
950 Lemon Meringue Filling
Luxara 950 Lemon Meringue Filling is a complete powder mix for a cold make-up lemon meringue filling. Luxara 950 contains both colour and flavour and immediately after depositing, has sufficient structure to allow a meringue topping to be applied. An additional advantage of a cold make-up system is that the pastry is not adversely affected by the lemon filling as can happen with a hot make-up system. Luxara 950 is recommended for catering or domestic use and is suitable for large-scale manufacture if self-leveling of the filling is not required.
